In ancient times, when modern technology didn’t exist, the ice pits represented the only opportunity to obtain cold foods and drinks, during warm seasons, including delicious lemon sorbets made out from the ice that was stored inside them. They were quite large circular brick constructions, for half part underground, with a stone or brick vault covered with a layer of terrain on which they made growing brambles and locusts, and which could arise from the ground even a few meters. On the top, at the center of the vault, it was opened a hole from which snow and ice were introduced. The access to collect them was placed laterally and consisted of a stone staircase descending steeply within the structure. In winter, as a result of the rigors of the climate, the sheets of ice that were formed naturally were sawed and transported in the ice pits and arranged in layers, interspersed with straw and dry leaves which had an insulating function. This system made it possible to keep cool the deepest layer even when snow or ice were extracted from the upper layers. Today the ice pits are left to themselves, and there are only a few traces. Those ones dug directly into the ground, like simple pits, are covered by debris dragged by the flw of water, while those ones in bricks are reduced to a few ruins hardly recognizable. Their memory, however, is stored in the memory of those who saw passing by many seasons, and still lives in the local culture and tradition of the Terminio Cervialto area, ready to be rediscovered by who appreciates the beauty and charm of the things from the past.
